Quick Dinner Quesadillas
It’s late, everyone’s hungry, and you have some leftover chicken, some cooked veggies in the fridge. It’s quesadilla time!
Queasdillas are easy, adaptable and can be eaten out of hand if you use enough glue (read CHEESE). Here’s the basic recipe and feel free to ad lib as you rifle through the fridge..
- Whole grain tortillas (I use rice tortillas found in our healthfood store’s refrigerator section)
- leftover chicken, shredded or diced up fine
- canned beans, rinsed and drained (black are nice)
- minced onions or scallions
- leftover veggies, preferably green, chopped small)
- organic (raw) cheese of your choice
Place a tortilla in a skillet over low heat. Sprinkle with beans, veggies and meat if using. Sprinkle cheese on top, making sure cheese is used in a glue-like fashion so top tortilla will stick to bottom tortilla and hold contents inside. Place 2nd tortilla on top and press down lightly and assist stove in melting the tortillas together. if you have a sandwich press, go for it, but if not, use your hand in the fry pan! Flip after a few minutes, and when starting to crisp, remove from pan. Cut into wedges with scissors and serve with guacomole and salsa. Yum!
