Roasted Eggplant with Sauce–Easy, Peasy!
Okay, I came home from work, hungry and slightly irritable, and Sandy was up working at his Mom’s house. I wanted to make something for dinner and at the same time, use up some veggies that were on “borrowed time”. That eggplant needed to be cooked! Mind you, I was tired and needed something fullfilling and quick. Here’s what I came up with, and it was SUPERB.
1 eggplant, peeled if not organic, and cut into roughly 1 inch cubes
EVOO spray
seasoning of your choice– I used Mrs. Dash Italian blend and fresh pepper
Jarred preferably organic tomato sauce
slivered fresh basil
Spray a foil-lined shallow baking pan with oil. Add cubed eggplant and spray. Add seasonings, and spray again. Make sure the veggies are in a single layer. Roast for 15 minutes at 400 degrees, then turn them over and roast for an additional 15 minutes. Brown them, but don’t burn! Remove form oven, place eggplant pieces in an oven-proof baking dish (pick a pretty one!) , sprinkle on the shredded basil, and top with about a cup of sauce. Return to oven and heat through, around 10 minutes or so. Remove from oven, toss to coat, and if you eat cheese, you can even add parmesan or romano. I ate it without cheese and it was SO GOOD!!!
